Pumpkin Spice Lactation Cookies, Anyone?

I’m really glad that nursing moms are supposed to eat an extra 500 calories per day, because I can definitely eat every bit of that in lactation cookies. However, I did try to cut the “white, refined crap” by making this recipe with coconut flour and sugar.

Ingredients:

2 c. coconut flour (or other refined flour alternative)

1 c. oats

1-1 1/2 c. coconut sugar (I used 1 1/2 c. this time, but they were actually a little sweet for my taste)

1 1/2 tbsp. Pumpkin Pie Spice

3 tbsp. Brewer’s Yeast

2 tbsp. golden flax meal

1 tsp. baking soda

1/2 tsp. salt

1 c. butter, softened

1 egg

1 1/2 tsp. vanilla extract

1 can pumpkin

Recipe:

  1. Preheat oven to 350 degrees. Spray cookie sheet.

  2. In a large bowl, combine the flour, oats, sugar, Pumpkin Pie Spice, Brewer’s Yeast, flax meal, baking soda, and salt.

  3. In the bowl of an electric mixer, combine the butter, egg, vanilla extract, and pumpkin.

  4. Slowly add the dry ingredients to the wet ingredients in the bowl of the electric mixer.

  5. Using a large spoon, scoop cookies onto the cookie sheet. They will not spread out very much, so you can place them 1-1 1/2 in. apart.

  6. Bake for 13-15 minutes.

You could easily add chocolate chips to these cookies for an extra amount of awesome! But, they are also delicious as-is. I hope you enjoy them as much as I am! They are definitely going to be a staple in our house over the next few weeks.
